Mr Smith's Curry

Mr Smith's Green Curry

Ingredients

6tbls. Olive oil or vegetable oil.
2lbs Of any meat of your choice.
2 large onions sliced.
Curry leaf about 5 leaves.
About 5 cloves.
About 5 cardamom pods.
About 1 tsp. Black peppercorns.
About a 2 inch piece cinnamon sticks.
About a 2 inch piece of fresh root ginger peeled.
5 large cloves of garlic roughly chopped.
(Or 1dsp Garlic and ginger paste)
A little fresh mint.
A very large bundle of fresh coriander.
Green chillies to taste.
3 tbls. Lemon juice.

METHOD


Roughly chop the coriander(including the stalks), mint, and chillies break up the cinnamon stick then place into a grinder or food processor with the cloves, cardamom pods, Black peppercorns, garlic cloves, and ginger. (or garlic and ginger paste). Grind all these ingredients into a smooth paste. (if a food processor is used you may need to grind a little more useing a pestle and mortar) Meanwhile Heat the oil in a pan with a tight fitting lid, to a fairly high temperature. Then throw in the curry leaf this will sizzle immediately, quickly add the onions and fry till they are just turning brown at the edges. Then add the massala (paste) to the onions and fry for about 2 minutes. Add the meat and fry for another 3-5 minutes. Turn the heat down to a simmer cover and cook until meat is tender stiring occasionaly (add a little water as necessary) when meat is tender add the lemon juice stir well and serve.
